Fernando's commitment to excellence is evident in every step of the process, and it begins with a touch of magic—the Anaerobic Natural process. Perfectly selected coffee cherries, plucked at the peak of ripeness, embark on a 192-hour journey within sealed plastic containers. Here, a secret alchemy unfolds, as a proprietary mix of microorganisms, fungus, and bacteria are introduced to regulate the fermentation process. This secret ingredient, carefully guarded by Caramba Cafe, becomes the catalyst for enhancing the coffee's inherent qualities.

After this meticulous anaerobic fermentation, the coffee cherries are transferred to elevated African beds, where they embark on a slow and deliberate drying process that lasts between 28 to 35 days, dictated by the whims of weather conditions. This patient drying period, accompanied by a constant dance of movement, serves as a final touch to the potentialization of the cup's characteristics.
